2017 Momento Mori Bianco
This was a new Cuvée for 2017 and was a result of near perfect fruit from the incredible growing season that was.
This won’t be a regular cuvée each year.
This fruit is usually all dedicated to “Staring at the Sun” but such was not only the quality of the fruit when we picked it but there were also much lower than usual sugar levels. That coupled with the perfect phenolic and flavour ripeness. I couldn’t help but keep a small portion aside to vinify separately.
I’m not a fan of heavy, syrupy renditions of Fiano but prefer a lighter, aromatic and tense version.
This was all vinified in stainless steel using, lets just say, “unusual” methods for the variety. It spent extended time on skins, approximately 5 months, although this does not really show in weight and texture. It was then racked carefully and spent a further 5 months in stainless before being bottled by gravity. It has also had another 5 months ageing in bottle since then.
It is a super aromatic wine which on the nose has herbal notes of cut grass, spice, nettle and green apple, plus a couple of other more illusive tones. It all gives the impression of something heavier than it actually is. The palette is a similar showing and is light and lithe but with complexity and purity in spades. The wine has as amazing tension and finishes with green apple acidity and a beguiling complexity that keeps you going back for more.
There was one small tank of this made, resulting in 75 cases.
